Domaine Jean Collets et Fils are spread over the best slopes of the Right and Left Banks of the Serein with 4 levels of appellation. Their wines stand out for their purity freshness, finesse and minerality.
Their Vaillons plots are on the left bank of the Serein and are made up of limestone soils rich in marine fossils and in particular Exogyra Virgula, a small oyster typical of Chablis soils.
Each wine of the Domaine is vinified differently though all undergo spontaneous alcoholic fermentation. The Vaillons is aged for 10 -12 months in 1/3 stainless steel, 1/3 oak and 1/3 burgundy pieces.
This wine has won the International Wine Challenge Gold award for the 2017 vintage and the 2012 vintage.

This wine offers a typical Chablis style of minerals aromatic nuances like gun-flint. Perfect with all fishes, shellfish as well as with poultry or white meat.
